So I have had a lot of people ask me where I come up with ideas for my meal and treats…It stems from a desire to eat like garbage, lol. Its something I battle on a daily basis, but fortunately I win that battle 99% of the time. I am by no mean perfect.
But with that desire to eat like a second grader, I have come up with a few (quite a few actually) recipes that I have concocted in order to satisfy those urges and remain guilt free! I hit my macros, I get results, I get to eat ice cream!
So I wanted to share with you my recipe for my Banana-Almond-Coconut Ice Cream!

Smash the banana in a normal serving bowl until the banana is a creamy texture. The more ripe the banana, the better. Usually when the banana has a few brown spots is the best time to use them.
Next you are going to want to chop your almonds (or buy chopped almonds). I use a “slap-chop” style chopper that works well.
Your next step is to mix your plain nonfat greek yogurt and banana. The add a 1/2 packet of vanilla sugar free jello pudding mix. This will thicken quickly so be sure to mix it well so you dont end up with pockets of dry pudding mix. If the mixture is too thick, you can thin it out with coconut or almond milk. Normal dairy milk works just as well though.
After your mixture is consistent you will want to add in your chopped almonds and unsweetened shredded coconut. Mix well.
Now for the magic. Place your mixture in the freezer for 20 minutes. After 20 minutes, remove from the freezer and stir the mixture. Be sure to scrape the sides of the bowl well. Place back in the freezer for another 30-40 minutes. Once again, remove from the freezer and stir. Finally, place back in the freezer for 20 minutes or until you have achieved your desired ice cream consistency.
Serving size: 1/2 cup
So if you are trying to follow the the P90X3 nutrition plan, the Insanity nutrition plan, the Focus T25 nutrition plan, or any nutrition plan for that matter…this high protein, awesome source of fats, frozen treat will fit your plan! You seriously dont have to eat like a bird to be healthy. Its a matter of finding what works for you and then getting creative! Experiment, try new recipes, try new mixtures…Part of the fun of eating healthy is discovering the new.
