Apple Banana Protein Pancakes

apple banana protein pancakesSince making the change to a more healthy lifestyle, I have accepted that I wont be eating 3-4 double western bacon cheeseburgers each week. I have accepted that eating a full pound of breakfast sausage each week is not helpful. I have learned that no matter how much I workout, yellow cake with chocolate frosting is not a proper recovery meal.

I wont lie, I miss eating this stuff all the time but I dont miss feeling like crap all the time. One of the foods that I gave up when I made my lifestyle change to a more healthy one was sweet breakfast items: muffins, donuts, pancakes, french toast… that sort of stuff. So I set out to discover how I can reintroduce those items without feeling guilty – in fact with the recipe I share below, you can actually feel GREAT about eating this!

 

Coach Todd’s Apple Banana Protein Pancakes

These moist, protein packed, punch-your-tastebuds discs of glory are just the ticket I needed to bring back the old days when my fatty mcfats mentality ruled my life – except these are crazy healthy! These flapjacks are packed with easy to digest protein, high quality fats that actually help you burn fat, and a daily dose of vitamins that would make the Centrum Silver salesman blush!

So lets get to it!!!

Ingredients:

  • 3 scoops vanilla pea protein (I used Nutra Summa Apple Pie flavor pea protein)
  • 1/2 cup whole wheat pancake mix
  • 2 cups coconut/almond milk blend
  • 1 banana
  • 1 small apple (green apple is best for low glycemic index)
  • coconut oil (to make your pan slickery)

Directions:

Pour your coconut/almond milk into your blender. Add in your pea protein and blend till smooth. Then add your pancake mix and blend again. The you chop up your fruit and toss that into the blender as well. I like to blend in between adding each ingredient to get the smoothest batter possible.

Next you can take your batter and poor it right from your blender into your pan that you have heated a small dabble of coconut oil in. This will keep the pancake from sticking to the pan.

Serve:

apple bananaI like to spread some natural peanut butter and a little clover honey on these before smashing them down my face. I also like to boil down some fresh berries with natural honey and drizzle that shizzle all up on those delicious frisbees!

Get creative though! Add different fruits, try different toppings…Eating healthy is a crap ton-o-fun if you want it to be!
